Chocolate Riccotta Recipe - enjoy!!!

Chocolate Ricotta Two 1/4-cup servings

This high-calcium "pudding" has the benefits of cocoa and cinnamon - and the flavor of Mexico. Experiment with different brands of ricotta - they have different textures and flavors.

Prep time: 10 minutes

Ingredients: 1/2 cup lowfat ricotta cheese 2 tbsp mild honey 2 tbsp cocoa powder 1/2 tsp vanilla 1/2 tsp ground cinnamon

Instructions: 1. Combine all the ingredients in a food processor and process until smooth. 2. Scoop into small dessert dishes and serve.

Per serving: 145 calories 3 g total fat (2 g sat) 11 mg cholesterol 24 g carbohydrate 10 g protein 2 g fiber 100 mg sodium

I make something similar - it's been on the DS board for a while: Ricotta Fluff 1 lb ricotta (full or skim, your choice) 1 pkg sugar free pudding (my favorites are banana & lemon) 2 tubs sugar free cool whip Blend the pudding with one tub of cool whip.  Add ricotta and blend.  Fold in the other container of cool whip. This makes a lot, but it's packed with protein and low in carbs, so you can feel good about it.  It's my dessert on days when I'm out of range.

These recipes sound delicious! I love ricotta so much--I put it in everything (pancakes, mashed cauliflower, on pizza....)

Can't wait to try this out. I've been eyeing some good quality dutch process cocoa at the grocery store and this sounds like the perfect thing to try it out on.

The lactose in Ricotta KILLED ME!  I thought I'd just die from the pain...So I make a version of Ricotta fluff from Bronwen's recipe except I use cottage cheese that I whip all the chunks out in a food processor and add pudding mix...I LOVE it with sf pistachio or banana...I add a little ricotta for the flavor....but full ricotta must have a ton of lactose!  Cottage cheese has a slightly salty flavor but the same texture and no pain!! The whipped creme makes it nice and creamy and light... Thanks for the recipe....I'll try this...since I love cinnamon and chocolate....a dash of cinnomonin anything chocolate is one of my secret "wow" ingredients...so I know this is gonna taste yummy...Plus I tolerate honey very well too even over SF sweeteners...so this might be my new favorite!  I'll let you know if I ever get around to cooking again...I am wiped out from the long weekend of cooking non-stop meals...Crock pot is cooking all my meals this week!  LOL
