I need some LUNCH ideas!

Hi Everyone, Well, I am going to try to lose some of this weight I have gained, and to be honest, I don't like to eat lunch, I have gotten into the habit of "snacking" for lunch.  Can you all give me some ideas of nutritious and easy-to-fix lunches?  I really appreciate it.  Wish me luck! Rhonda Carter started at 275 lbs., lost 100 lbs., current weight - too chicken to look

I have a salad. A cup of lettuce and part of a tomato but I either put a can of tuna (2.5 oz) on it or frozen shrimp, thawed. Then I toss in a mini container (tupperware) of my dressing of choice...Usually Raspberry Vinegret.. I buy cooked shrimp and weigh out the snack bags with 4 ounces in each one. If I don't feel like having salad, I pack a mini container of ****tail sauce and just dip the shrimp in that for lunch. Yummy stuff.  I also like to buy the immitation crab meat and do the same thing. Sometimes I just eat that with a fork and tartar sauce...Also good stuff.  For snacks I like the 1 oz cheese sticks (individually wrapped) and sometimes I wrap a piece of turkey lunch meat around it.  Today in my lunch bag: 1 cheese stick 1 4 oz container of Dannon Yogurt 1 - 1/4 cup of honey roasted peanuts 1 small orange 1 - salad (lettuce/tomatoe) and dressing 1 - 4 oz of cooked shrimp 1 - SoBe Protein bar On top of that I had stuff I didn't eat: 1 medium apple 1 =12 oz container V-8 Juice 1 can of iced coffee AND I got in 72 oz of water with crystal light in it.
Yes, RNY worked for me but it also requires a lot of work from me!

Bumble Bee and/or Chicken of the Sea have come out with individual cups or tins of flavored tuna.... I take one of these, a string cheese stick and roll up in a carb control tortilla..... instant lunch..... The Bumble Bee Tuna in the sun-dried tomato and basil flavor is to die for!

BEANS & CORNBREAD Bean Ingredients: 1 Can of Glorys Pinto Beans (Southern Style) 1 TBSP Sour Cream Cornbread Ingredients: 1 cup unbleached all-purpose flour 1-cup cornmeal 2 tablespoons splenda 2 teaspoons baking powder 1/2-teaspoon salt 1-cup milk 1/3-cup canola oil 1 large egg, slightly beaten  Cook beans slow until nice thick broth. 

Preheat oven to 400 degrees F. Lightly grease and 8 or 9-inch square pan.

Sift dry ingredients into mixing bowl. Form a well in the mixture and add the milk, oil, and egg. Stir just until everything is combined – there should still be scattered clumps of flour, about the size of baby peas or BBs.

Pour the batter into the prepared pan and bake for 24 to 30 minutes, until the cornbread is golden brown. Serve with beans and enjoy!

If you like chilli this works out well.  On the weekend I will make a crockpot of chilli then I made single sevings and then put them in the freezer.  When I am in a rush a grab a bag or container then I am ready to go for lunch.  I am also assumming that you have a microwave available to you ate lunch time.  Another thing I do is pack up leftovers from dinner the night before.  Tuna, egg or chicken salad is good in a pita bread or wrap.  (Whole wheat of course).  Yogurt with granola is good with a peice of  fruit.and maybe some nuts on the side.  Good luck!

Here is what I ate for lunch this week today - tuna fish (tuna, light mayo, pickle relish, hot sauce) and melba toast... and a salad yesterday - leftovers - 4oz of chicken breast, a salad and a little veggie soup tuesday - lean cuisine and a salad monday - 4oz deli turkey, slice of RF cheese, salad You can balance out the meals with some fruit if you like... I currently eat 2 servings of fruit a day but eat one w/bfast and the other w/afternoon snack.  A lot of times I bring dinner left overs... I love turkey sloppy joes the next day, leftover taco meat (for taco salad! either chicken or beef), refried beans w/cheese, salsa, sour cream and maybe some baked chips... if I eat out I like grilled chicken from chikfila and taco salads from qdboas... turkey sammies at subway.

Total lost - 153 Since surgery - 117!
Goal weight - 155 (mine) 180 (surgeons)
Current weight - 135 (2020 I lost 10lbs due to dedicating myself to working out more and being in better shape)

A typical day's meals at work First thing at work: Coffee w/sf hot cocoa added Break:  Ka****LC Protein bar, coffee w/sf hot cocoa Lunch:  Sliced Chicken deli meat w/cheese in romaine leaf wrap and a small taste of mustard (a serving is equal to two of these) Other lunches: Turkey Chili, Tuna salad, leftover shrimp & stirfry veggies, etc.  Since I can only eat a small amount, many times the leftovers from dinner make my lunch. PM Break:  Fresh fruit Water throughout the day Keep it varied, and you won't get bored. Good luck!
