Tapenade Shrimp
We had this tonight and really enjoyed it. Hope you do too.
Serves 4 (regular servings)

1 16oz package Shrimp (shelled & deveined)(defrosted if frozen)
1 10oz jar Trader Joe's Roastd Red Pepper & Artichoke Tapenade
1 6oz container Crumbled Feta cheese
1 8oz container sliced Mushrooms
2 Green Onions chopped small (reserve some green tops for garnish)
1 Tablespoon Olive Oil
1 teaspoon red pepper flakes (Optional)
In a large sauce pan saute the onions and mushrooms in oil until soft. Add everthing else EXCEPT CHEESE AND GARNISH and heat through.
When ready to serve - quickly stir in cheese (Feta does not melt), plate and top with green onion tops.
I served this on grated Cauliflower (like rice). Before WLS I served it on pasta or used it as a pizza topping.

Oh yummy...All of the ingredients are some of my favorite foods! I will definitely try this!
I do cauliflower too...Only I steam it...Ma**** and fry some garlic in olive oil mix into the cauliflower with a little peccorino romano cheese and it almost tastes like a garlic pasta or rice. It's a nice side for many things...(Just don't boil it in water or it gets too watery when mashed)
How do you prepare it once it is grated? Cooked or raw?

MOCK RICE
1 lb.raw cauliflower
grate it using a grater with large holes. Use the palm of your hand to avoid grating your knuckles.
Put in a glass dish.
Cover with a wet paper towel.
Cook 5 minutes.
Season to taste.
Sometimes I mix with cooked onion, barley, and wild rice for a Pilaf.

Thanks! That sounds nice! I just bought cauliflower the other day...I'll try it your way for a change!
You know, I haven't stopped thinking about this recipe since I saw it...LOL I'll make myself crazy until I finally do make it! I might try it with chicken if I don't get shrimp soon! (I just went shopping the other day and have no room yet for more food!) My husband HATES when I throw away food...I'm always cooking stuff and freezing it for later, just so I don't have to throw stuff away.

that is so funny -- I do too. I have a freezer full of small containers of stuff. I did figure out that I needed to label/date them cuz I kept forgetting what was in them.
