Another Fiber One Recipe!
Ooh, I just saw this in the listing of new recipes on Sparkrecipes.com and thought of the many of us here who love Fiber One cereal. Pumpkin Waffles! I for one am going to try this recipe next weekend! Sounds like it will be very good and being a waffle, it should freeze well too so I can have one during the week for a special treat. I'd like to try a recalculation on the nutritional stats, they don't seem right to me but even if they are it still seems pretty doable.

Can just imagine this with some sf maple syrup or maybe some sf Cinnamon Bliss syrup.

Using the exact same recipe and calculating program that the original poster used I did come up with different numbers. I think the sodium is correct, actually...even checked with a USDA site for table salt. It is really high in sodium which of course sounds totally stupid to say but I've never looked at the numbers for actual salt. Personally, I think you could leave it out without any affect. I make cottage cheese pancakes with no added salt and no trouble...this is just a glorified version of that. You could take this same recipe and make pancakes out of it. With my cottage cheese pancake recipe I've also made waffles, crepes and even aebelskivers!

carbs - 39
fats - 6
protein - 30
fiber - 11
sodium - 1033
I don't know how the two calculations come out so differently in fat but it still isn't a huge amount. Hope it tastes as good as it looks, I'm looking forward to a new way to eat my Fiber One.
