Chicken & Spinach Bake - Yummy Recipe

I finally after drooling for weeks about it, lol, made this dish and it was fabulous. I did make a few minor changes to lower the fat content and because I love tomatoes.  Instead of using 1/2 cup of oil (per directions on the italian salad dressing mix, I used 1/4 cup and 1/4 cup of water.  Then added an extra roma tomato just because.  Oh and instead of 4 chicken breast I used 9 boneless, skinless chicken breast tenders and NO pasta.

Chicken and Spinach Bake

 

 

 

9 oz bag of pre-washed spinach

 

4 boneless, skinless chicken breasts, uncooked

 

½ tsp salt

 

½ tsp pepper

 

2 Roma tomatoes, sliced

 

1 cup sliced mushrooms

 

1.4 oz packet Italian salad dressing mix

 

Balsamic Vinegar

 

2 cups 2 % shredded Mozzarella or Parmesan cheese

 

16 oz pack angel hair pasta

 

 

 

Place the spinach in the bottom of a coated 9 x 13” baking dish.  Place the chicken breast on top of the spinach; season with salt and pepper.  Place the tomatoes and mushrooms on top of chicken.  Mix the Italian salad dressing according to package directions, substituting the balsamic vinegar for the regular vinegar.  Pour the dressing over the spinach, chicken, tomatoes and mushrooms.  Top with cheese.  Bake at 350 degrees for 40 minutes or until chicken is cooked.  Serve over pasta.

Dana... I was going to fry up some tofu in ginger soy sauce but who in the heck wants tofu after reading this recipe?  That can wait for a day I don't feel like making a huge effort to cook.  FINE!   Guess I'm going to the store for some freaking chicken boobs!  You suck!  Now I gotta do my hair...I was doing the bed head look today... LOL  Just kidding...This sounds sooo good...I love tomatoes too...and spinach and mushrooms and pasta...but the pasta doesn't like me!  I'll make some cauliflower with garlic and parm cheese to put this over!  I am making this I'm also making a recipe on Eggface's blog...YOU MUST SEE this dessert she made...She calls it a Valentine Cheesecake...food *****r something....It looks so good.... I went to bed hungry. Then I saw all her other recipes...I swear!  I had to go straight to bed...I wanted a feast!  What a naughty little tease she is! j/k... theworldaccordingtoeggface   Anita

Anita, I know you'll enough this one, lol......haha on the chicken boobs and oops sorry you keep your bed head look today, lol.

I might have to try this over cauliflower also thanks for the suggestion.  Oh one thing I might have the nutritional info on the accountablity wrong, for some reason I am thinking I forgot to add the 2% mozz cheese to my calculations so I'll check again tonight and let yall know for sure.

I have found some yummy recipes on Michelle's site, I'll checkout the cheesecake, lol.

Dana, I really did enjoy this as did my husband...It was right up my alley!  I will definately make that again. I'm in the process of making Michelle's cheesecake...It's cooking right now!  LOL It's 10:30 pm and I am still full. (I over ate...I couldn't stop...I forgot my protein drink earlier...and so I was famished by the time I made this)  LOL  YUMMY!!!!!  Went out with my bed head...(It was windy and rainy, why bother!?) Hugs, Anita I tried to add a pic of the meal...but I can't get it to stay in the post...It keeps disappearing...But I did take pics!  LOL

This looks a great dish - and easy to make too.  I'm definitely going to try it.  Plus the cauliflower dish looks good too.  Thanks for the ideas.  Do you mash the cauliflower and use it as a mashed potato substitute?

Cauliflower I use in place of mashed potatoes or in this case pasta. For a pasta substitute: I steam the califlower til it's tender but not mush....I brown 2 cloves garlic in two or three tablespoons of olive oil (extra virgin for full flavor) and then I hand mash the cauliflower and pour the garlic and oil over and mix well....then sprinkle some grated parmesan or romano cheese into while it is hot. Season with salt and serve as a side.  For mashed or whipped potatoe sub: For whipped cauliflower cook the cauliflower a bit longer so it's very soft...Then whip them like whipped potatoes. (milk or cream...salt to taste)   Taste great like that and then topped with plain greek yogurt (my new sour cream) bacon and chives!  Nice side! too Anita

Thanks Anita I so LOVE mashed potato and slip up from time to time and have some, but now I have a viable alternative.  So no slipping up into Carb land anymore for me hehe.
