Hiya! I haven't been keeping up very well with my intake online, just have been having some major, major headaches...However, I'm at least getting in my protein, not much else...been drinking it rather than eating.....Hopefully, it'll work itself out with my head...Have a great day! Dede

Here is the recipe Carla, hope you like them.
When I try the chocolate recipe I will let you know, got to use these up first.

CARROT OATMEAL MUFFINS

1 1/3 c. whole grain oat flour
1 tbsp. baking powder
1/2 tsp. baking soda
1/2 cup craisens 1/2 c. firmly packed brown sugar
1 c. uncooked oats
1 tsp. ground cinnamon 1 c. shredded carrots (about 2)
1/2 c. skim milk
2 slightly beaten eggs
3 Tbsp melted light butter
1 tsp. vanilla

Heat oven to 375 degrees. Spray 12 medium muffin cups with no-stick cooking spray or line with paper baking cups. Combine first 8 ingredients; mix well. Add combined milk, egg whites, butter, and vanilla, mixing just until moistened. Fill prepared cups 3/4 full. Bake 25-30 minutes or until golden brown. Serve warm. Makes 10-12 muffins
TIPS: To freeze muffins, wrap each securely in foil or place in freeze bag. Seal, label, and freeze. To reheat frozen muffins, unwrap, microwave at high about 45 seconds per muffin

I used the granulated light brown sugar. I am sure protien could be added, might need to put less flour in the mix so it wouldn't be too dry. I haven't tried it with this recipe. Sher

Sher,  The Muffins sounds good.  I would like to copy it instead of writing it all down.  When I try to copy something it copies everything instead of just the recipe.  I am having a problem getting my pic on also.    Thank you for the muffin's sounds goooooooood!!! Tena
