Used to love it, now I hate it!
Cooking that is. I used to love being creative in the kitchen and cook all kinds of things. Now 2 1/2 yrs after surgery, I hate it. I think it has a lot to do with the pickey family and all the left overs. So my question is, what can I eat that is healthy, simple and instant or takes little cooking?

You know, I am just the opposite!! I used to never cook and now I cook all the time! I usually just broil, bake, or grill some meat and have some steamed vegetables. I usually cook some mac & cheese or something like that for my husband and kid (so they don't feel deprived). I do a lot of stove top cooking. For instance, last night I cooked some boneless pork chops. I put very little oil in the pan and sauteed some onions and red & yellow bell peppers and then I put the pork chops in. I then added a little bit of white cooking wine so that they chops wouldn't start to burn. I also added my seasonings. It only took about 10 minutes at the most to cook. I just served it with a simple salad and my family loved it.
I have a small crock pot and I cook in it alot .. I put my meat on for the next day before I go to bed .. I made pork roast monday night .... So yeaterday we had roast potaoes and carrots .. Then today I took what roast was left and put BBQ sauce on it like a pulled pork and fixed mixed veggies .. I keep things very simple ...
Have you tried any of the Lean Cuisine (or similar) meals? I can't eat most of them because of a gluten sensitivity, but if I could, I would eat those OFTEN. They are just about the right amount of food and are easy to keep up with the amount of calories etc. You might need to watch for sodium counts though... I don't ever think to check that.

I hear you, :-) I am the same way. One note of caution though; for us, there is really no "simple and instant" that is truly healthy. The Lean Cuisine is a good call, or go to the store, buy ingredients you need, commit to a little chopping and washing and pre-prep work when you're putting those groceries away, and then when it comes time to "cook", things are already pre-chopped or sliced or measured and all you need is to throw them together to make a meal.
It's tempting to want short cuts, but that will lead to bad habits and eventually, regaining weight.
