From Accountability - 3 Recipes Requested
SF Moist Chocolate-Mocha Cake
2 cup flour
1 tsp salt
2 tsp baking powder
3/4 cup unsweetened cocoa powder
Stir together until well blended, then add in :
2 cup Nature Sweet Crystals or X-W8
1 cup oil
1 cup hot coffee ( I us decaf )
1 cup milk
2 eggs
1 tsp vanilla extract
Beat at medium speed for about 2 minutes. Batter will be thin. Pour int a sprayed 9x13 pan. Bake @ 350 for about 25-30 minutes, just until toothpick comes out clean ( do not overbake, like until sides are pulling away from the pan )...Cool in the pan on a raised wire rack, after about 2 hours put a couple toothpicks in it randomly and cover loosely with plastic wrap to keep even more moist...Best eaten the next day, either with a little powdered sugar or fruit on top or with the frosting recipe to follow...
Fluffy Frosting
8 oz ff cream cheese, softened
1 cup cold water
1 1oz pkg chocolate fudge sf instant pudding mix
5 tbsp splenda granular
1 cup heavy whipping cream
Beat cream cheese, adding water very gradually, until smooth. Gradually beat in pudding mix and splenda, beat again until smooth. Gradually add in whipping cream and beat once again until smooth and very thick. Chill, then frost cake, once frosting is on cake it must be stored in the refrigerator...
Monkey Bread
16-20 unbaked frozen yeast rolls
1 3-oz pkg regular butterscotch pudding mix ( not instant ) ( can us sf if you can find it )
1/2 cup splenda brown sugar blend or Nature Sweet brown sugar
1 cup chopped pecans
1 stick butter, melted
The night before place frozen rolls in a well greased bundt pan. Sprinkle dry pudding mix over the rolls. Sprinkle brown sugar over the pudding mix. Sprinkle pecans over brown sugar. Pour melted butter all over. Cover with a damp towel or plastic wrap ( helps keep it all soft ) and let rise at room temp overnight, about 8-10 hours.
Bake @ 350 for 25-30 minutes, turn out onto a plate and serve warm by pulling of the roll chunks...
Hope everyone enjoys these recipies, I have given thought to trying to substitute the pudding mix in the Monkey Bread recipe with butterscotch flavored protein powder, but am not convinced it would work out the same, however if anyone does try it , let me know how it turns out...
CAUTION : while these recipes may be sf or close to it, they are definately not low calorie...
