Hi Amy, I posted a welcome to you on your other post ...Those muffins sound really great, how about posting the recipe...I still indulge my cravings for sweets albeit usually thru sf or nsa desserts and I'm open to try new recipies, always...
Looks like a great day of choices to me, don't see you going overboard on carbs which will help since you are still trying to lose another 50 lbs...How long have you been working the WW program? I might suggest too, to help with continued loss to limit fats, my nut had us on a program where you read the nutrician label, go across from the cals line on the labels to where is says cals from fat, multiply that number by 3, if it is less than or equal to the cals then it is OK to eat as far as fat content goes...I think this, the limited carbs and regular exercise were key in helping me reach my goal and hope this formula can help you too...

1 1/2 cups all-purpose flour 1/2 cup whole-wheat flour 1 1/2 teaspoons baking powder 1 teaspoon baking soda 1/4 teaspoon salt 1/2 teaspoon ground cinnamon 2 large eggs 1 1/4 cups Splenda | 1/4 cup canola oil 1/2 cup unsweetened applesauce 1 teaspoon vanilla extract 1 cup shredded zucchini 1/2 cup crushed pineapple 1/3 cup craisins |
1 | Preheat oven to 350 degrees F. Lightly spray a muffin pan with cooking spray. |
2 | Combine flour, baking powder, soda, salt and cinnamon; set aside. |
3 | Beat eggs and splenda on medium speed with an electric mixer for 5 minutes. Add oil, applesauce and vanilla; beat at medium speed 1 minute or until blended. Add flour mixture; beat at low speed just until blended. Stir in zucchini, pineapple & craisins. Spoon batter into prepared muffin pan. |
4 | Bake 20-25 minutes or until cake tester inserted in center comes out clean. Cool in pan on a wire rack 10 minutes; remove from pan and cool on a wire rack. |

Hi Summer, I really don't think I held up all that well, did snack all day ...My saving grace was that I had a big hand in planning the food for the day and I targeted people to bring stuff that weren't to bad in the carbs, the boss ordered the pizza but I never can eat much of that with crust at a time, so managed to control that too...I think my worst downfall was the blueberry lemon bars, I made those, so I did have total control as far as content and I cut the normal single serving into 4 bite side squares so I could indulge repeatedly and still be within a reasonable limit ( those things are just too yummy to pass by )... Now enough about me, on to you : GREAT DAY ! and I don't think you need to lower you carbs too much more, my nut always told me not to do less than 45-50 a day for long term because your brain functions need carbs to work and extended time on really low carbs numbers can cause memory loss issues and sluggishness among other things...Also, I know this sounds weird, but more cals might actually push to into loss mode again, also try shaking up your exercise routine, like maybe adding 15 minutes of fast walking early in the morning if you are an afternoon/evening workout person, or vice versa, I did this when I was in a major stall during my 1st year and after about 10 days on the shake up schedule suddenly I started losing again really well...
