Eggs vs. Eggstirs

I started limiting my whole egg intake early this year and have since been using store-brand egg substitutes for scrambles and omelettes.  However, I've noticed that I can eat more eggstirs (publix brand) than eggs.  For instance, if I make my black bean omelette (or any kind for that matter) with two whole medium eggs, I have to force myself to eat the last few bites...but if I make it with the eggstirs equalling two eggs (1/2c) and the exact amount of other ingredients, I can eat it all without a problem and without feeling "stuffed".  I even have this problem when I do just the whites or even a whole boiled egg...it just seems like it doesn't want to go down as easily...which is supposed to be a good thing for us, right?

I made the switch because when I eat eggs,  I tend to eat them a lot (daily) and I just thought I'd spare myself the extra fat cals and cholesterol.  But I've heard that an egg a day is okay if you don't have any health issues.  So the dilemma is this...should I just eat the 1 egg omelette and halve the other ingredients (which would probably make up for the extra egg cals), or stay with my eggstirs?

In case you're wondering, I only use 2T of canned ff black beans and 2T of finely-shred mexican cheese with a bit of chunky salsa on top, so it's not like a monster or anything and I'm almost 4yrs out.
