Sorry I took so long to post these, got off track and did not get around to pulling them out this weekend like I promised...But I did not forget you
Man I love these custards :
EGG CUSTARD
4 eggs beaten ( must be real eggs)
1 12oz can ff evap milk
1 cup lf milk ( use chocolate if you like mocha flavor)
1/2 cup splenda ( I like mine sweeter so I us a cup)
2 tsp vanilla extract
pinch of salt
pinch of ground nutmeg
Beat eggs until foamy... add other ingredients...pour into custard cups ( makes 9 for me). put into a large enough deep dish to surround cups with a ho****er bath about 1/2 way up the sides of the cups...Bake at 325, 40 minutes to an hour (center will be jiggly, but you can insert a knife in the center and it will come out clean with no ooze from the cut area)...Cool on a wire rack and refrigerate to keep fresh...
Variations :
do flavors by sub-ing choc milk for white milk ( I use carb countdown choc ) and instead of 1 cup of regular milk use 1/2 cup reg milk ( white or choc), 1/4 cup half and half, & 1/4 cup of any sf flavored davinci syrup...
Stats : 110 Cals 09 protein per custard cup
My fav is to use choc milk and davinci kahlua flavor, but mix it up and try different variations, have not had a bad one yet...
PROTEIN BALLS
1 cup peanut butter ( I prefer creamy)
1 cup rolled oatmeal (not quick or instant)
1 cup protein powder ( I prefer choc or choc-mint)
1/4 cup splenda
Warm the peanut butter in micro about 30-45 seconds to make easier to mix...Add other ingredients and mix well ( if a little dry sprinkle with water to make it easier to work with )...Roll into walnut size balls then roll again in splenda & sf cocoa powders mixed together to make a nice flavor coating...Put on a tray and refrigerate to allow them to firm up again, store in the fridge in a zip baggy or covered bowl to keep fresh...
Stats : 113 cals, 7 protein per ball
