Accountability - What did you eat, Friday 05/25?
Alesia, I must of forgotten to post my water. I do keep track of it. The recipe for the stuffed portabellos is as follows:
Ingredients
6 medium sized portabella mushrooms, stems removed 1 .5 cups part skim milk ricotta cheese
1 Tbls grated parmesan cheese
4 oz part skim milk shredded mozzarrella cheese
1 large egg
1 Tbls dried parsley flakes
1/2 tsp italian seasoning
1.5 cups canned diced tomatos or sauce
Directions
1 stuffed mushroom is about 200 calories with 15 grams protien, 15 grams carbohydrates and 9 grams fat
mix cheeses, egg, and seasoning together. Use about 1/4 cup in each mushroom cap (remove stems first)
place in baking dish and pour tomatos over top and bake about 30 minutes at 350*
Number of Servings: 6
If someone used fat free cheeses it would of course lower the calories. The amount of stuffing you get is a little bit more than you need so adjust ingredients if need be or use a few more mushrooms.

I am trying to still lose more. I am hoping for another 15 to 20lbs.
