Welcome to a new week and a new day...The weekend was great overall, but I'm also glad its Monday and I'm back to work, my day is better regimented at the office... B - 10 oz protein hot choc w/ reddi whip        1/2 a lrg pancake         2 beef sausage links S - 2 nsa joseph's mini shortbread cookies       2 bites of a blueberry soft pretzel       20 oz 1/2 caf sf/ff cinnamon dulce latte L - 1 slice jalapeno cheese toast with pesto        S - snak size sf jello pudding w/ added fiber       1 sugar cookie D - 3oz bbq pork chop       1/4 c 4 cheese rice-a-roni       1/2 a fire grilled zucchini S - 1 slice sf peanutbutter cheesecake w/ sf fudge sauce       1 mini hershey bar PLUS - 66 oz water/crystal light

Alesia, I saw you ate sf p'butter cheesecake w/ sf fudge sauce.  Is this a recipe or something you purchased already prepared?  If you made it will you send me the recipe(s).  If you bought it, what is are the item & brand names & where did you buy them? Thanks!

Hey Vickie,

It was very yummy and pretty easy to make, the fudge sauce is the sf fudge topping from Smuckers found in the grocery where they have all the icecreams stuff, just zapped it for 30 seconds to make it liquid and dizzled over my slice, I used nsa josephs shortbread cookies for the crust cause they had them at my local dollar general and $1 a bag for josephs is just to good to pass up...My family eats all my sf stuff too so they put regular fudge sauce on theirs...

Here's the recipe:


Peanut Butter Lovers Cheesecake

1 cup sugar free cookie crumbs
1/2 cup coarsely chopped peanuts
8 ounces light cream cheese, cut into cubes
8 ounces fat free cream cheese, cut into cubes
1/2 cup fat free sour cream
1/2 cup fat free ricotta (or low fat cottage cheese)
1/2 cup peanut butter
1 cup Splenda Granular
2 teaspoons vanilla extract
6 egg whites (or 3/4 cup egg substitute)


Coat a 9-inch spring form pan with cooking spray. Combine and sprinkle sugar free cookie crumbs and chopped peanuts evenly over the bottom of pan. Set aside.

Process the cream cheese, sour cream and ricotta in a food processor until smooth. Add the peanut butter and mix. Slowly add the sugar and vanilla extract. Slowly pour the eggs through the food chute with the processor running. Blend until combined. Spoon the mixture over the graham cracker crumbs. Bake in a 300F oven for 50 minutes. Center will be soft, but will firm when chilled. Turn the oven off and leave the cheesecake in the oven for 45 more minutes. Remove from oven; let cool to room temperature on a wire rack. Cover and chill 8 hours. Serve with sugar free fudge sauce, or if you are a P.B. & J. lover, tip with your favorite sugar free jam or jelly.

Makes 10 servings.

UUGGHH! Not a good eating day yesterday. I do great during the week and then the weekends kill me. I am up two pounds this morning and by the time I get it off the weekend will be here again. I hate when I do this to myself. B-biscuit, gravy, hashbrown, egg L-chicken and broccoli, rice S-24oz french vanilla cappuccino from QT D-chicken fahita nachos S-two ice cream sandwiches(the real thing) about 60 oz water and a whole lot of unswt tea with splenda Candy I did spend two hours cutting our grass but I don't think it helped me in the aspect of weight....sigh...

I just was not hungry yesterday...oh who am I kidding! I was dreaming about peanut butter but I filled up on water and had a total of five EAS RTD shakes.

I dream and indulge my need for p/b regularly all you have to do is read a few of my posts...I looked at your profile today, so know you have posted with us before cause it looked familiar, but, sorry I just don't remember - What is the reason for the liquid diet?  That has got to be really difficult at this stage of the game - whatever the reason, applaud you for sticking to it  , I hope it is working... Sunday: B - AchievONE, 1 pack of grilled cheese crackers S - 2 whole wheat waffles w/1 c mushed blueberries L - apple w/2 T pb, 3 sf pecan cookies, sf Jell-O cup, 5 sf Werthers S - 1/2 bag light Cesar salad w/1 oz lf shredded cheese, sf Jell-O cup w/ff Reddi-Wip, sf fudgie, banana D - 7 Triscuits w/32 g squirt cheese, AchievONE, sf Jell-O cup S - 2 c nsa lf vanilla ice cream w/1 c sliced strawberries and ff Reddi-Wip Plus I had 64 oz water, 16 oz 1/2 decaf coffee, 16 oz green tea, 24 oz sf hot cocoa w/ff Reddi-Wip, 12 oz cf Diet Coke, 12 oz diet Ocean Spray cranberry juice and I walked on the tread for 30 minutes and lifted light weights for 30 minutes.
