Hello and welcome to Tuesday Had a really nice extra day off yesterday from my little trip to DC, everyone else went back to work/school and I had the house to myself...Slept a little extra and went to to shop for goodies without anyone in tow, was great ...Think it was also a pretty good food day, sometimes I wish I didn't have to work and could have more days like this, but when I'm off too long I realize I would go stir crazy if I was a stay at home mom... B - 10 oz choc/banana/coffee protein frappe S - 2 protien balls L - leftover 1/2 chile relleno      3 bites chicken chimichange      5 corn chips and guacamole S - 1 cherry mini kitkat & 1 sf pecan turtle       1/4 slice romano chibatta bread with sour cream and olive spread ( taste test at local grocery)       16 oz sf/ff decaf cinnamon dulce latte D - 3 1/2 oz grilled london broil        3/4 c caesar salad        1/2 a slice of garlic cheese toast S - 1/3 a mini loaf of rochester poop bread PLUS - 82.5 oz water/crystal light

Black Coffee B - Banana, 1/2 C. soy nuts S - 4 Reece's Peanut Butter Cups  L - Hormel Beef Pot Roast (Pre-packaged meal) S - 4 oz. lf cottage cheese, grape tomatoes, boiled egg D - 1 C. mixed green salad w/ steak strips (about 3oz.), 2T. Blue Cheese dressing S - NSA ice cream sandwich About 48 oz. water - NOT ENOUGH!!!

Hey Kristi, Love the wagging finger on the p/b cups - peanut butter is definately a hot button for me, try to limit myself go for the sf cups or add benefiber to the regular so I get some extra benefit from satisfying my need for a "fix"

OMG - I finally had the cinnamon dolce latte' at Starbucks, Alesia!!  It's like a dessert!!!!!  B - 1 c Wheat Chex w/2 T ground flaxseed, 1 c ff milk, banana S - 2 snack packs pb Ritz Bitz, AchievONE L - 5 sf chocolates, 3 sf lemon cookies, Greek salad, small fruit cup S - Power Crunch bar, 1/2 small movie unbuttered popcorn, AchievONE D - 3 oz salad w/1 oz lf sh cheese, grilled asparagus, sf Jell-O w/ff Reddi-Wip, sf fudgie S - sf pineapple lushcake, lf mozzarella cheesestick The worst thing was I must have had about 50 sf jellybeans while I was watching "King of Queens" - and I was up most of the night w/rumbly yucky tummy and on the pot !  All I wanted was one sf choc. bunny for Easter and hubby WAY overdid!  He KNOWS I have no control - grrrrrr!! Plus I had 49 oz water , 50 oz Diet Coke , 17 oz green tea and 16 oz sf hot cocoa w/ff Reddi-Wip.  Plus we walked for 45 minutes at the mall before our movie. Yesterday was NOT my best day - but today's a new one, right?!?

Ah and now you know why you see it so often on my daily check - in's...an excellent sf high protein alternative

Okay yesterday was not so good. My back has started bothering me and no matter what I took or did for it , it would not stop hurting so I think I ate to feel good, which was not a good idea... B-Buckwheat waffle, SF syrup, egg L-lean cuisine, 7 bt. size prunes S-(2)100 calorie pack cookies D-fajitas(homemade by hubby so I wouldn't have to cook) S-cheese cake and strawberries Trying to redeem myself today.... Candy, Sorry to hear you are not up-to-par, hope it is better soon...I have a really great sf cheesecake recipe if you feel the need to indulge in the future and want to avoid the real stuff...

I would love that recipe when you get some time. I am a cheesecake addict and everytime my guard is low I run and get some. This was a slice from Chick-fil-A, god forbid I have a whole one here to torment me... Candy

Got the recipe, will also post to main Grad Board...It is super easy and very yummy...


Sugar Free Oreo Cheesecake


Crust

25 SF Oreo Cookies
1/4 c. (1/2 stick) unsalted butter, melted

Filling

4 pkgs. (8 oz. each) cream cheese, at room temp.
1 1/2 c. Splenda
2 tbsp. flour
4 lg. eggs, at room temp.
3 lg. egg yolks, at room temp.
1/3 c. heavy cream
2 tsp. vanilla, divided
15 SF Oreo cookies, coursley chopped
2 cups sour cream

Butter a 9x3 springform pan.

Crust: Break up cookies and process in a food processor until crumbs. Add butter and mix until blended. Press into pan and 2/3 up the sides. Refrigerate while preparing filling.

Filling: Beat cream cheese in lg. bowl until smooth. Add 1 1/4 cups Splenda, mixing for about 3 min. until fluffy. Mix in flour. While beating continuously, add eggs and yolks, mix until smooth. Beat in whipping cream and 1 tsp. of the vanilla until well blended.

Pour half the batter into crust. Sprinkle with the chopped oreos. Pour remaining batter over and smooth top. Some of the Oreos may rise to the top.

Place pan on baking sheet. Bake in preheated oven at 425 for 15 minutes. Reduce temp. to 225 and bake for 50 minutes or until set.

Remove cake from oven and increase temp to 325. Stir together sour cream, remaining 1/4 cup Splenda and 1 tsp. vanilla in a bowl. Spread over top of cake and return to oven to bake 7 minutes or until sour cream begins to set. Took mine about 10.

Let cool, and refrigerate at least 4 hours, preferably overnight, leaving in springform pan before removing before serving. I had to run a knife around the outside before taking off my sides of the pan.

IT WAS AWESOME..I had tried it the week before using Nonfat sour cream for the top, and it just was too wet. So this time I used Full strength sour cream. Next time I'll use reduced fat, which I'm sure will be ok, but this one was PERFECT.
