I don't know how many of you have Trader Joe's stores in your area, but they have the BEST chicken salad on the planet! I have a friend who has been able to replicate the recipe, and I'm telling you folks, I can't seem to get enough of this stuff. Boneless, skinless chicken breasts, cooked and cut up in pieces Craisins Pecans Celery Dressing: 1 cup mayonnaise 1 Tablespoon Splenda 1 Tablespoon Vinegar 1 Tablespoon Honey Salt & Pepper to taste Since it's just me, I only make a half batch at a time, but my friend has three children, and she can't keep up with the demand! My protein intake has shot up dramatically since I got hooked on this. Great snack before and (especially) after the gym!

I love Trader Joe's!!! They me by my name there now. LOL. That Chicken salad is the bomb! I normally can't eat most chicken (get's stuck in the pouchie), but I can eat there salad! They also have awesome granola, sweetened with honey instead of sugar. Delish! Also addicting! Jane

Suzanne, TJs has calcium balls in a round container. They are to die for. I took some to someone's last dinner and everyone gobbled them up. They are creamy like chocolate - not chewy. YUM! JudyAnne(wholovesyournewpictureinyourcutehat!)

When I make a half batch I use 3 of those frozen chicken breasts. Be careful when putting the dressing on, as it can get really soupy if you just dump it all in (that's what I did the first time I made it - YUK). I put in half, stir it up, then put in more until it's the consistency I like. I use cider vinegar because that's all I have right now, but my friend uses white vinegar, and hers doesn't taste any different than mine. As a matter of fact, this is what I am having for lunch right now!
