Panko bread crumbs

Has anyone tried these? They're wonderful! I have an unsatiable crunch addiction, love pickles, apples, raw veggies but I like crunch with my protein too. I make baked or sauted fish and chicken strips with the panko crumbs--(I use the Ian's in the natural foods section of my grocery store--they're whole wheat- there are other kinds too mostly made from white flour usually found in the oriental foods section in most stores). I only rinse my fish or chicken in water, pat it dry with paper towels, apply a light spray of butter flavor pam and dip in the crumbs mixed with whatever seasonings (I'm also into spicy--like cayenne pepper) or herbs I'm in the mood for. Then bake or saute as usual-(I always cook fish and chicken at 475 so they don't get dry) the crumbs are light not like a greasy deep fried kind of thing but really light and crispy--If you like smaller crumbs you can smash them with a rolling pin--I usually do this with the Ian's because they are rather large pieces. They are also wonderful on roasted veggies--I made some last night- used carrots, parsnips(thought I didn't like parsnips, but gave them a try--yummy!), sliced fennel bulb and onions. I bet potatoes, cauliflower and broccoli would be good too--will try it soon. I partially cooked them in the microwave, sprayed them with pam, tossed them with the panko and baked in a very hot (475 degree oven) for about 20 minutes wow were they good. Dear Wanda, I love Panko bread crumbs. I generally toast mine in a pan before using though, so they get browned without being in the oven very long. I use them for breading my chicken parmesan. I spray the breaded chicken before baking to add a touch more browning as well. One thing I've learned to do is bake the chicken or fish on a cookie cooling rake over a cookie sheet so the heat gets under neath as well. I cook my chicken at a high temp for just about 20 minutes to keep it nice and moist inside while the panko gives me a nice crunch on the outside. Good stuff, Sally
