I use light mayo, a touch of lemon juice, and a dab of water to make a substitute for the egg wash. Then I dredge the fish fillets in a seasoned bread crumb made from melba toast (nice brown and crunchy!). Bake at 425 for about 20 to 25 min. depending on the thickness of the fillet.
If you want to bake a whole fish, I don't think you can beat doing a salt crust. But most people do just fillets.
