Here as Casa de Hunter... we just made what is affectionately known as Lasagna Slop. Basically it is lasagna without the noodles to hold it together. It tends to slop on the plate the first day but tomorrow it'll hold together just fine. We brown ground turkey in olive oil and spices. Mix w/ tomato sauce from the can. We sautee mushrooms in olive oil and put in salt, pepper and cayenne. We thaw and drain frozen chopped spinach. We mix ricotta cheese with parm cheese and shredded mozarella and a couple of eggs. We just layer it with some shredded mozarella on top and back til heated through, browned on top and bubbling. Yummy. Lots o' protein. Lots o' fat too unless you use ligther ingredients - we didn't. Got fiber from the vegies. I may make a crustless quiche later after Rich heads to work. He is DJing this afternoon on the classic rock station here in DC and then afterwards doing a few hours of traffic reporting (that it is his normal weekday job) on the radio. So I'm solo for most of the day. I've got a hair cut at 12:30. I hope to get a bit of sun later this afternoon. Going to NY for a party next weekend (sister's 49th surprise birthday and end of chemo celebration) so we'll see my family. Get to meet Dad's main squeeze (aka "golf buddy" Peggy) for the first time. My Dad is dating. How weird yet wonderful. Guess that's it from here. Later, folks! Kathy

I made Spinach Burritos last night 1# Ground Turkey...brown it and add chili powder or maybe a pkg of taco seasoning. Add 10 oz chopped spinach(I buy it frozen, defrost and press ou****er b4 adding). Add 16 oz salsa. Mix all together until heated. Turn off the heat, THEN add 2 cups shredded cheddar to hold it all together. I don't even bother with the tortilla, just dump my portion into a bowl and YUMMMMM!!!!!!!!!!! Julie

Sounds good! We do a fair amount of taco meat here too. We use the reduced sodium taco seasoning as we find the full strength one a bit salty for us. We will do taco salads or I just eat it right out of the tupperwear warmed up. Put some cheese on it - yumm. We'll have to try it with the spinach and salsa too. Kathy
