Amazing Carbs!
I am amazed at how fast carbs effect my body.
I started the "carb control" with steph the last three days. Just by cutting the carbs on day one I lost 2 lbs! Yesterday I ate "bad" carbs and gained a pound back! I just can't believe how fast and furious carbs effect me.
Is it the same way with everyone weight wise, you notice right away? I also noticed I was wanting to nap after "carbs" yesterday.
I guess I never stop being amazed at how the food I like, just dosen't like me...

I woke up to my fridge being "just cool" so I will have to deal with a broken fridge for a few days I'm sure, I don't think they will come on Sat. I have put a call in but they don't open till 9am.

sharon i guess im one of the lucky ones..i can eat carbs but in moderation..this summer my eating was so bad and i was very lucky that i didnt gain any weight..i ate mostly vegetables and crusty italian bread for lunch ..yea bad choices i know..i cant eat any big types of macarini at all they get stuck in me..rice goes down easy no problem..bread and olive oil well we aint going to even go there.
i gues we are all so differnt with our bodies and chemicals in us..
i suppose if i gave up carbs id loose another 10 pounds in a month but then once i would eat carbs maybe id put that back on..
i did thisa surgery to be more mobile and healthier so i eat everything i9n moderation except this summer with my lunches lol.but back to school next week and ill be eating protien for lunch ..and getting back on track again..

People like you amaze me. I can't imagine not gaining from carbs, although I have to say that I have been maintaing within a 5lb range for a year. Your lunches sound...AWESOME. Thats what I like veggies and a crusty bread...Yummy

Sharon, I try to keep the white carbs to a minimum although I do occassionally eat rice. Also once in a blue moon I'll have something with potatoes. As for pasta and bread, I don't miss them at all.
I also get tired easier with too many starches, if I stick to the same foods I do better, although as I posted yesterday I'm really bored with it now.
Hope your day is a great one too, be sure to drink lots of water, this Texas heat is just aweful.

I guess I just have to keep up with sticking to the basics, but ya know sometimes it's just dang hard! Glad to know the tiredness isn't just in my mind. I have a recipe I am going to send you that I really enjoyed last week with asparagus, it was sooo good and different. Yes, it's so hot here already this morning, I told the kids we would go to a walking trail ~now I hear a steady thunder so who knows....

Sharon, please do send the recipe for the asparagus, I love them. I bought an egg plant at the store this morning, going to do something with it today, probably bake it with lots of onions, tomatoes and cheese *yummy*.
Feeling somewhat better, still tired though, might be time for a lab draw.

Make eggplant pramesan....its sooo good. But you gotta pan fry the eggplant...
First peel it and slice in 1/4 inch slices and salt both sides and stack on a rack (I use my little broiler rack from the toaster oven) Do this a couple of hours before you cook it...this sweats the eggplant and drains some of the water.....
dip in egg and milk mixture...then dip in bread crumbs and pan fry in a little oil or olive oil or even non stick spray till browned on both sides...I like my eggplant crispy....
then just layer with a marinara sauce and parmesan cheese and top with a thick layer of mozzerella.....bake till cooked thru and mozerella starts to brown on top...
Make a salad and some garlic bread (but don't eat the garlic bread LOL)
Good stuff....eggplant parm is my FAVORITE...love it.

What--no bread for the bread addict?!! Good for you! I was telling Dennis last night at dinner about that bread at the rest. with Joann. Just thought I would throw this little tidbit at you--was watching part of The View one day and they do this segment on "which is the better choice?" Here are the three choices and the nutritional value--I know I almost fell off the couch when I saw it:
DINNER
Eggplant Parmesan:
Calories: 1230
Fat: 64g
Sirloin Steak w/ Mashed Potatoes & Creamed Spinach:
Calories: 900
Fat: 45g
Fettuccini Alfredo:
Calories: 1130
Fat: 81g
The nutritionist said something about eggplant being so bad because it absorbs the oils. Anyhow--just thought you might be interested as I was making it for a while also thinking it was a better choice. BTW--those facts are for a "serving".

I don't doubt your facts.....after the greasy crap I saw those people eat in the restaurant....I'm sure it's bad. I haven't had eggplant out in a long time...I had an eggplant parm appetizer at that restaurant the other night....and I ate about 2 bites....I don't order it at Porto Fino's anymore because of the cheese. I now get a side of meat balls and they make veggies in a marinara for me.
Home made eggplant parm is no where near that.....for a serving
Eggplant has only 24 calories in one cup - 0 fat
the marinara I use has 100 calories in a half cup - 3 grams of fat
I use a non stick pan and no more than 1 tablespoon of olive oil...which has 120 calories and 14 grams of fat...and that is divided among all the eggplant slices....

The real culprit is the cheese. There is so much fat and calories in the cheese and restaurants LOAD those Italian dishes with full fat cheese. Eggplant is so bland...they gotta load it with cheese. I found that if I put a little parmesan cheese in Italian seasoned bread crumbs...it makes it taste better.
I use part skim mozzerlla and no where near how much they use in restaurants.
Nah....I don't order eggplant parm in a restaurant...or lasagna...or ziti or chicken parm....and I don't eat pasta so no Alfredo for me either......but I'll keep making it at home.....It doesn't have anywhere near that much fat or that many calories.
And nope....I only ate some of the meat out of my half of the sandwich. No bread. Melba and I shared a philly cheese steak sub. I KNEW I was gonna get a small bag of Kettle Korn at the local vendor. I looove that stuff. He's also at the Farmer's Market every Saturday morning. He makes the best Kettle Korn. So I didn't eat the bread at all. Only ate 2 croutons from my salad. But I sure ate the popcorn. Forgot to put it on what I ate today......
