Another healthy recipe....37g of protein

Good Morning from the beach....I haven't had breakfast yet...and I'm already planning dinner...go figger. I'm gonna share another one today....I'm in a cookin' mood. I love fruit and summer is my favorite season for fruit. I incorporate as much as I can in recipes, not only for good nutrition, but to keep my calories down. I used to have fried chicken 2 or7 times a week. I have not had fried chicken in 4 years. But since I like chicken, and its difficult for me sometimes, I tend to make it on the moist side. This recipe is one of those. This one will surprise you.....its really tasty. Spicy Chicken Breasts 2 teaspoons jerk seasoning 2 or 3 boneless chicken breast halves Nonstick cooking spray 1 can no sugar added peach slices drain and reserve juice 3 Tablespoons finely chopped onion (more or less) 3 sliced plums 1/2 Tablespoon packed brown sugar 1/8 teaspoon salt 1 cup pitted fresh cherries Rub jerk seasoning on chicken breasts. Sautee chicken in nonstick frying pan coated with cooking spray (I use the olive oil spray and if too dry will add a tiny bit of low fat margarine) Coo****il chicken is tender and no longer pink (170°)....transfer to plate and keep warm. Add about ¼ cup of the peach juice to the pan and deglaze with a wooden spoon. And onions and cook till tender. In another bowl, mix the remaining peach juice, half the peaches, half the plums, brown sugar and salt to the skillet then cook and stir over medium-high heat until thick and bubbly. Remove from heat and stir in cherries, remaining peaches and plums. Spoon over chicken breasts and serve with brown rice. You don't have to serve this over brown rice...I sometimes don't....but make a nice salad and a green veggie....and you have a good healthy low cal meal thats vetter than anything the COLONEL could come up with. No problem Doug. I looove that recipe. It makes chicken so moist and tasty. It has never stuck making it like that. Plus I love the fruity sauce it makes. It's a staple for me. I also like to use extra crispy shake and bake with a half cup of parmesan cheese mixed in. I use boneless skinless chicken breasts...and even though they come out juicy....I still have to be very very careful with them.
