What's for dinner?
Since I have poker tonight with the 'boys'...I have decided to make Pecan Crusted Dijon Talapia for dinner...this is sooooo good.
Makes 4 servings
4 Tilapia filets
1/2 cup mayo (not low fat)
1/4 cup Dijon mustard
Nonstick cooking spray
1/4 cup finely chopped pecans or pecan meal
This is the original recipe....The only change I made was to not use so much mayo. I make 2 filets...not 4. I bought some pump spray fat free Parkay.....so this time I will spray the filets with that...then spread each filet with about 1 tablespoon of mayo combined with a half tablespoon dijon and roll in pecan meal...then bake 375 for about 10 minutes (12 for thicker filets)(Also, I put tin foil on a pan and spray with non stick...makes clean up easier.)
These are really good...low carb and low calorie. Talapia is now my favorite fi**** is sooo mild and flakey....nothing like salmon or tuna. If you are not a fish fan, please give this recipe a try. Fish is so good for us....

Hey Charlie! I love seeing your smiling face! I need to check in on the Grads board more often...
I had class tonight so was lazy. We grilled chicken in herbed rub and ff italian dressing the other night so I tore some up and threw it on a bed of lettuce with some cuke, green pepper, a chopped boiled egg, some croutons and some ff italian dressing... The tilapia sounds good... I know you're not a huge restauraunt freak, but Logans has a phenomenal southwestern grilled tilapia with a really good corn and black bean salsa - it's my new favorite when we go there.
