I've just recently developed a love for fish. So far I've had blackened grouper and tilapia. I have liked both. I want to cook it at home, but I've never fixed fish before and I need some help. What's your favorite fish recipe? What is your favorite kind of fish? I want to make sure to try a bunch of different kinds. Thanks! Lily

I like a good piece of salmon. I take jarred pesto and soft some whipped butter and mix it together half and half and then solidify it in the fridge. Then take the salmon... put some of the pesto butter on top and bake it. Probably 400 degrees for 15-20 minutes depending on the thickness. It is yummy. I've had tilapia coated in nuts like crushed almonds or hazelnuts. Just spray a foil lined pan with pam and put the fish on and bake. Probably 350 degrees for 5-7 minutes a side then turn over. We did shrimp on the grill (on skewers) and basted them with a mixture of softened butter, cilantro, cumin and finely chopped jalapenos. Yummy. Kathy

I eat haddock all the time. I put it in a baking pan, I mix 2 TBS of low fat mayo and some grated parm cheese together and spread it on the fish. i sprinkle a little bread crumbs over the top and bake at 375 for about 15 min or until done. I also use lemon and season it with garlic and pepper

Pick up some Mahi Mahi filets from Sam's Club. Spray with butter flavored or olive oli Pam, season any way you like and bake till done. Serve with veggies & salad. OR...........................chill, flake and mix with a little light mayo & plain yogurt, lots of chopped celery and you'll never open a smelly can of tuna again!! DN
