Pimento Cheese Recipe..lower fat
1 block Cracker Barrel sharp 2 % low fat cheese
4 oz 1/3 or fat free cream cheese
1 small jar pimento's drained well
1/4 -1/23 cup light mayo
garlic powder , black pepper
shred the cheese ( Cracker Barrel ) one or one of your choice and you can use any brand you like and mild if you dont like sharp
Put the softened creamcheese and the mayo in a processor or hand mix the two until creamy add in the shredded Sharp Cheddar and stir Dont mix with mixer UNLESS you want a totally smooth cheese when done ,.. I like mine chunky
Add in a dash of garlic powder and black pepper ... Add the garlic to your taste
Cover and chill at least one hour before eating
ON the mayo I start with 1/4 cup of it and add a little until I get the texture spread I want . I dont like mine to thick with mayo so I usually use a bit more than 1/4 but not 1/2 cup.

You can eat this on crackers or I do celery as no carbs there...
