Strawberries!! Yum Yum!

I went out and picked strawberries today, 20 lbs worth!!  I am making strawberry jam like there is no tomorrow.  Sugar free even!  It tastes sooo good!!  I don't know what I am gonna put it on cause toast is pretty much out, cottage cheese pancakes maybe?  Ohh what I would to for a PB and J!!  Yumm... Edited to add I got them from Spooners and at 1.25 a lb what a bargin!

Oooh!!  I LOVE Spooner's strawberries!  I noticed the stands opened a few days ago, but every time I go by the stands they're sold out.  Guess I should get my butt out and pick my own.  I always forget you can do that.  Hmm, I'll have to try to find a sf jam recipe - I haven't made jam in ages.  Sounds yummy.  Luckily my tummy can handle a piece of really toasted whole wheat bread, so I've been able to have pb&j toast a few times using Simply Jif and SF Smucker's strawberry jam.

Better get out soon they told me today they would only be there another 7-10 days!  They have SF pectin mix in the store with the regular stuff.  Have fun!

Its soo easy; you get the SF pectin mix in the grocery store(baking section) splenda and berries.  The recipie in on the pkg. I did the freezer jam so I didn't have to cook it.  The one I used was 4 c of crushed strawberries (I used a potato masher) splenda, pectin  mix and your done!  Just make sure your jars are super clean and you leave 1/4 inch at the top for freezer expansion.  It doesn't set real fime, but it does get nice and thick.  Some pkgs call for some lemon juice too. Have fun. Kiddo will love it!!

Awesome - thanks for letting me know about the dates and the pectin.  I'll have to find out if they're open tomorrow or "run an important errand" Monday during work! Thanks Helen!!!  I'm so glad to "see" you again!
