Pack protein shakes/bars and keep them handy for situations when you can't find something appropriate to eat.
Make sure you've got a water bottle with you at all times.

Make sure to keep hydrated - always have a bottle of liquid with you. It's easy to dry out in the dessert.
Every place you eat should have protein choices. Stick to things you've already tried so you know they'll sit well with your stomach. If you're not going to have a fridge for leftovers, it might be wise to split things with a family member so that you're not tempted to eat an entire meal. (My mom and I will do this at restaurants even now - a 70/30 split of food tends to work great since full portions are too big for her as well.)

I've had good luck in Vegas eating protein forward. The restaurants are very accommodating. See a salad with a protein, but know you can't do the veggies yet? Ask if you can get the protein as a side. Most places will let you do that. See if a family member is willing to share with you. Order off the appetizer menu. Shrimp ****tail is a good option. Also, you may want to try some foods at home before you go. Eating at a restaurant may not be the best place to experiment.
It CAN be done there. Whether you stick to your plan or chose to indulge is 100% up to you!
The nice thing about Vegas is there's literally meat everywhere, and very good lean meat at that, as well as fish. I'd think it's pretty easy to stick to a variety of diets in Vegas...there's huge food variety there, especially on the strip.
I follow a ketogenic diet post-op. I also have a diagnosis of binge eating disorder. Feel free to ask me about either!
