I ate lots of soft fish. Tilapia in particular. Yum.

Ricotta is one of my favorites. You can make it savory with a little tomato sauce and cheese, then nuke or bake it to taste like lasagna. You can also make it sweet with some SF instant pudding and a little milk (or cream) to your desired consistency.

next to the mashed potatoes
I ate refried beans, chili, tuna or egg salad made with Greek yogurt instead of mayo, sugar free pudding with protein powder added, scrambled eggs, cottage cheese, and ricotta.
My soft foods included: cream soups, cottage cheese w/ mayo & salt & pepper, cream cheese, cream potatoes, instant pudding with added protein powder, I made a soup with rotel tomatoes, velveeta cheese, and canned tamales - put in magic bullet and turned it into a liquid. I would only do 1/2 cup or 2 or 3 tbs a day - but it was wonderful to have something with some "taste" to it.
