Whatcha eating today? Monday, 2/20/2017
I am apparently the only one not enamored of the Ricotta Bake... it was too strong/salty for me, and my other half ended up with bad heartburn.
Then again, I'm lactose intolerant, so I'm not sure what I was expecting. I'll stick with solid proteins like chicken/beef/tofu/whatevs...
But hey, everyone else seems to like it.

I just discovered Ricotta cheese (had only ever had it in pasta dishes prior) and really enjoy it. I'm still on soft foods so it works well for me. I'm just moving to crock-pot cooked meats this week.

Last week I was MIA because work is so busy right now. I work as an HR Consultant and all our clients are needing help with ACA Healthcare forms and it's crazy! Hopefully this week will be slower.
Last week I ate less healthy than I normally do but I didn't gain or lose any weight. This morning I was the same exact weight at the start of last week so I'm happy with that! I did get in my fastest 5k time on Friday. 34 minutes!! That's about a pace of an 11 minute mile (5.5 mph or so). That's crazy fast for me. Yay for fitness goals!

L: Slow cooker chicken enchilada soup
S: String cheese and some almonds... and maybe more coffee if I'm feeling *****y
D: Boca burger with cheese and side salad

Monday. The Monday that starts the insane schedule until after the move. Numerous 12 hour work days in a row, through working here and there on the weekend. Yikes! Cant wait until the move is over, but looking forward (oddly) to the experience.

It's a holiday for me, so we woke up late today.

L: leftover pollo con queso y frijoles negros
S: 1/2 protein shake
D: other half of protein shake, and... dunno, probably some Chinese chicken curry/tofu/garlic green beans

Did houework today after being sore from two days of landscaping. It I need to stretch and move and let me muscles know we are 2 weeks from gym time!!
