I'm in the final countdown for my class. Four sessions left! Three this week and Monday! It's going to be a busy week of finishing things and getting ready to host some DC escapees and then go into DC for the March on Saturday, but I remind myself that these are things I never would have done 5 years ago.
1: protein shake
2: leftover moo shu pork
3: slow cooker hawaiian chicken (it should be a leftover night, but there aren't many leftovers around, so I'll probably just dump this in the slow cooker today instead of tomorrow)
liquid and vites: on track
exercise: run and yoga stretching once I get home from class

CONGRATS on completing your courses. And THANK YOU for representing in Washington D.C. I so want to go, but I didn't plan right, and I'm certain there will be no where to stay by now. Its so important to show solidarity, and our power, as women.

Hello! New here. Nice to meet you, and way to represent at the march!
I'm up a couple pounds, so I'm doing pretty strict Keto right now.
Breakfast: Coffee w/heavy cream, 2 egg omelett with avocado and onions and 1 Oz of cheese
Lunch will be leftover pork loin w/spinach
Snacks if needed: Nuts or pork rinds
Dinner: Crock pot weather! I'm throwing a roast in w/veggies but no potatoes.
I'll either have another cup of coffee w/cream for dessert or 1/4 cup of Halo Top. In weight loss mode I usually skip dessert. But not the coffee ;)
BE STRONGER THAN YOUR EXCUSES.
Love Keto! And I never skip the coffee either. I've cut out diet soda and most of my artificial sweeteners and a lot of processed crap but will NEVER GIVE MY COFFEE UP! :-)

My weight is still hanging around 165, but my goal is 162. I guess its ok, but I don't want to give in to a higher goal weight, for fear it will be a slippery slope where next year I'll be at 170, and then 175...
Better to stop it now, and get back to 162. But my mind and body aren't cooperating with my plan!
And the struggle continues.

What do you put in your enchilada casserole? Sounds so good. I am obsessed with tacos, quesadillas and enchiladas. YUMMY!
The enchiladas are not low calorie! I use them as a not-too-unhealthy treat when I'm getting bored with my usual foods.
They are made from ground beef, browned with onions and green peppers - cooked a little, but still crispy. Mix in enchilada sauce and a some sour cream to make it creamy.
Then I layer low carb tortillas, with chuncks of jack cheese and the ground meet mix, and top with cheddar cheese and bake until the cheese is melted and slightly brown.
I use the "Mission carb balance tortillas." They work well.
Again, not a real diet food - lots of cheese, sour cream and tortillas, but they are so yummy.
