ROCK ON!  Alton is the bomb!  I wonder how balsamic would taste...

I am experimenting right now.  The last time I used bottom round roast.  This time I am using a couple of flank steaks, and cutting them a little thinner.  I am also experimenting with the seasoning.  Last time was a bunch of soy and ginger for an Oriental flavor.  This time it is more western.  There is still soy sauce, but almost as much Worcestershire sauce, a pinch of brown sugar, black pepper, onion, garlic, meat tenderizer, and some paprika.

That chicken cheesesteak sounds good too!  I will have to put that on my rotation.  We have bunches of chicken in the freezer right now.

Do you use a dehydrator or low oven heat?

I have made venison jerky with a dehydrator several times, but it seems I have no consistency of tenderness between batches.

I am using a dehydrator.  My first try was with the smoker last summer.  I got distracted, and did not get back to it in time, and it was beef charcoal by the time I got back.  This is my second batch in the dehydrator, and I have changed several things, so I can't speak to tenderness yet.  The last batch was pretty good, although some of the pieces were fairly chewy.  I am adding some meat tenderizer in on this one.

My oven has a dehydrate setting.  It's amazing.

Breakfast - egg/spinach omlet

snack - 2 slices bacon (first time for bacon since November)

lunch - spinach quiche  (we bought a lot of raw spinach over the weekend :-)

snack - home made protein bar.

I think my experiment with making the bar went bad.  The piece I ate was only about 1 x 2"

but I think it is expanding in my pouch, as I have been very uncomfortable.  Note to self, cut

back on fiber.
