Spaghettie squash lasagna, and Greek yogurt
I have made lasagna without noodles and instead using spaghetti squash- very tasty and pretty good stats. Tonight I had cooked the squash, then realized I didn't have the fat free ricotta. I have buckets of fat free plain yogurt though, so used that with an egg in it and shredded parmesan. Wasn't sure if it would work, but holy smokes! We liked it a lot better than the ricotta version. Here is the recipe- I used the pressure cooker, but it for sure would be good in the oven as well.
1 spaghetti squash
2 cups meat sauce (or sauce of choice)
1 cup or so of fat free Greek yogurt
1 egg, whisked
Parmesan cheese, shredded (didn't measure, but a handful)
low fat mozzarella cheese
pasta sprinkle (spice blend from Penzeys, similar to Italian herb mix)
salt and pepper
Directions:
Toss the squash in the IP whole, no punctures needed with 1.5 cups water. High pressure 20 minutes, quick release. (Or cook it in the stove until done). While that cooks, blend the yogurt, Parmesan, pasta sprinkle, salt and pepper. Once squash is done, scoop out the seeds. Layer squash, yogurt, meat sauce, and mozzarella. Repeat to fill your dish. You can make it directly in the IP liner, but I prefer the PIP method. 20 minutes high. Fold tin foil strips to make a sling to go under the PIP so you can get it out. I forgot, so the hubby had to fi**** out. He is getting very good at that at this point since I routinely forget.

IP is short for Instant Pot- a brand of a pressure cooker, not a quick fix for a smoke type thing! PIP is "pot in pot". This is where you pu****er in the pressure cooker, then a trivet on the bottom, and then a pot on top of the trivet. This allows the contents to cook under pressure without getting soppy wet in the water.
If you are not one that uses a pressure cooker, it might be worth checking into. You can cook a full meal in 15 minutes and have it be lean protein, veggies, etc with minimal fat or processed food. I swear by it, and it for sure helps me to maintain my weight due to skipping going out to eat all the time. I also save a small fortune by making my own yogurt in it.
