Whatcha eating today? Monday, 10/24/2016
I keep waiting for life to calm down a little, but it keeps not happening. The good thing is that these days I'm feeling capable of handling all of the craziness. Thankfully this week is starting off pretty low key as today I've only got Physics and my voice lesson. (Plus the usual stuff like cooking dinner and studying.) My Physics class is pretty awesome since the prof clearly wants everyone to a) understand and b) pass. The theme of this week though is "make it to Friday."
1: protein shake
2: quest bar - I really dislike having to do a bar for a meal, but sadly this is what time and location allow for today.
3: sausage and grits casserole - I'll be doubling the amount of sausage in the recipe and just having this for tonight's dinner. Leftovers will go to the guys.

Its gym day starting with 40 min. weight lifting followed by 1 hr cardio dance
B- hard boiled eggs 1 whole 2 egg whites
post workout muscle milk, dr told me I could try see how I tolerate it
L- left over salmon, broccoli, hot tea
S- 2 tbsp. walnuts
D- homemade turkey chilli (for the next two days)
s- sm apple 2 tbsp. peanutbutter
vitamins
water
errands, dentist for new crown placemnt cha-ching, laundry, rest, the voice later
Good morning and happy Monday, all!
I cooked salmon, pulled pork, and Chicken in Thai peanut sauce yesterday. Today I'm making chicken fried rice with cauliflower rice, and a chicken salad over spiralized cucumber with a spicy peanut sauce. This should feed me and the family for the week.
Breakfast - salmon
Lunch - chicken with thai peanut sauce
dinner - pulled pork
snack - Dijon lime chicken

Errands, taking my dad to eye doctor. Lots of fluids today, yesterday's McDonald's salad had wayyy to much salt for me! Gained 1.1 pound on less than 1,000 calories. I don't think so!

"Make it to Friday" seems to be my theme every week and I hate that. I wish I could slow down and enjoy my kids before they leave for college!

Life just gets crazier for me! I was going to buy a house next year with my boyfriend, but with my double school loans, its super hard. (Today I JUST PAID OFF my personal loan! It semi emptied a separate savings account by some but, its better to have little to no debt when buying a home). We decided to rent instead for a year. We have been together for 14 months (call me cray but I know he's' the one', weird, scary, exciting). The first time I will be living with a significant other. Its crazy scary and awesome at the same time. He, luckily, doesn't have debt. So for me I feel more pressure because of it (hence 2 jobs). One day at a time for all of us!
With all my crazy busy weekend, I managed to still lose 2lbs. I am thankful. I had a Halloween party and with all the junk food there was, I made healthy snacks and stuck to that. I had 2 small drinks with vodka and lite juice but, gave up. Wasn't worth the calories.

Lunch: garlic hummus and 2 Magic Pop rice cakes
Snack: Premier protein skake, banana&cream(will be my first time trying this flavor)
Dinner: salmon and spinach
