Whatcha eating today? Saturday, 10/22/2016
Husband left for airport at 4:30am & dog got me up at 5:00am. Too tired this morning to make the egg white veggie omlette I had planned.
B - Coffee with 1 oz of Premier Protein shake. Egg salad on 2 slices of Healthy Life toast. 2nd coffee, mid morning
L - Shrimp & feta cheese with cucumber, tomato, red onion, avocado & balsamic vinegar (my favorite!)
D- Meatballs, sauce & tofu spaghetti noodles (bought them at the oriental market & will be trying them for the first time)
S - Homemade chicken soup & something tbd (maybe some beef jerky or roasted edamame)
E - Dog park & walk around the lake.
AK Gipson - The noodles were good. They're in our Asian market & are House Foods tofu shirataki spaghetti shape. A 4 oz svg is 10 cal, 3 gr carb, 1 gr protein (also have a macaroni shape). Very filling & very much like spaghetti. Next time I make them, I'm going to only have 2-3 oz (the 4 oz svg is too much for me) with a protein. I'd also heat them up before adding any sauce. They are stored in a liquid and even though I drained them, they diluted the sauce.
Next time I think I'll try using them in a lo mein dish.
I think my day will rival yours in the "unexciting" category. I'm redesigning a web site for my non-profit, so I'll spend most of my day preparing materials for my presentation at the board meeting on Tuesday. I actually enjoy doing it. I am retired, and my non-profit work is an important part of my life and self-image.
Yesterday, I had a day trip with a friend, and we ate at a pub where I had a hamburger and onion rights. I didn't eat very much, but I did have perhaps a quarter of the roll and the breading on the onion ring (only one!). But it was enough carbs to cause me to retain water and show a gain on the scale.
But today will be better.
Breakfast - salmon
Lunch - I'll finish my taco casserole over spaghetti squash did from my new cookbook.
Dinner - Pork and cabbage fried rice, also from the new cookbook - yum
snack - Dijon lime chicken.
water and vitamins - always on track
exercise - I'm getting fed up with my laziness and will start walking again today.
Have a wonderful weekend, everyone.
Carol

W - working on
V - good
E - walked for an hour this morning
I am less than 5 pounds from onederland and it is driving me crazy that it isn't happening fast enough.

Apparently it's a Jack Reacher kind of day :)
I remember that it took me FOREVER to get to onederland. I was SO CLOSE for weeks it felt like!

Damn, homework on the weekend? I don't envy ya!
My weekend, super boring. I luv horror movies so I'm doing my own movie marathon while doing this resting & chilling out thing. Its rainy windy & cloudy so it makes it so much easier to stay in the house. Plus I'm feeling super whiny. I've been babying my arm. Reach up to scratch my head, oops, wrong arm, ouch. Whine, whine, whine, blah, blah, blah. My day so far looks like:
Breakfast Orgain protein drink, eggs, cheese & bacon
Lunch Quest protein bar, shrimp salad
Dinner Mahi burger, quest protein drink
Snacks skinny pop, jarlesberg cheese, quest protein chips, sf hazelnut spread

I have homework every single day of the week, and there's always something more that I could be doing. Busy busy. But I love what I'm learning, so it's all good :)
