cook books
Hi All,
I just bought a few new cookbooks which have some wonderful recipes. It is such a treat to have new recipes to spice up my diet.
so far, I've made
Chicken fried "rice" with caIuliflower rice. Its delicious and so healthy
Mexican casserole - which is basically taco fillings over a bed of spaghetti squash. Again, delightful and healthy.
Rueben stuffed sweet potatoes was another winner. - like a Rueben sandwich but served on sweet potatoes rather than bread - yum
Today I made a cold chicken salad with a spicy peanut sauce over a bed of spiralized cucumbers.
they were all great recipes.
The cook book is The Primal Low-carb Kitchen - Comfort food recipes for the carb conscious cook by Kyndra Holley.
I have two others I also purchased, but haven't tried yet. They are The big 15 Paleo cookbook by Megan Flynn Peterson and Skinnytaste by Gina Homolka. They look good but I haven't tried the recipes yet.
Do you have a cookbook that you'd recommend? I'd love to hear your recommendations.

The cauliflower fried rice is so good. I like to make it without the chicken so I can have it as a side dish or as a meal when I heat it up with a left-over protein, like beef, pork or chicken or with a quick stirfry of shrimp. Doing it this way also insures that I get my 2-3 ounces of protein.
I like to experiment and have been finding a lot of low carb recipes online at Pinterest or on Dlife (Diabetes Life). I can upload them to myfitnesspal & log the nutritional information or tweak them for my tastes/needs. Skinnytaste is one of the sites on Pinterest that I often refer to as well.
Check againstallgrain.com. I love her recipes... She just published a new book, but most of her recipes are still available on the site...

I have this book. It is really great!
