I will be trapped in the library today! So I plan on being super productive with prep for my upcoming exam and group presentation. Tomorrow is race day!
1: protein shake
2: lox, tomato, onion, capers, cream cheese (no bagel)
3: going out to eat, I need to bond with the menu and decide
liquid and vites: on track
exercise: nothing, race tomorrow!

2 ways I get my lox and cream cheese fix- one is to have it on a nice slice of a large tomato- like you are here...or even make a tomato 'sandwich'. Did that at the OAC convention....they had lox and cream cheese spread with mini-bagels. If I am having a bagel it is real NY bagel not some mini crap...
2nd I discovered just recently is to make an egg 'crepe' and then roll the lox, cream cheese and red onion in it. Basically make the crepe by beating one egg with a little water and salt. Spray or melt butter in a small fry pan - 6"... add the egg- don't stir or anything. Just cover and let it cook through. lift edges and slide out of pan onto plate. Fill and roll... so good.

For me, yesterday was spent at the college where my partner works, and the only place to eat on campus that is t fried everything is Einstein Bagels. I can't eat their bagels due to HFCS, but I love me some lox :D
