Coating for chicken that is lower carb/lower calorie?
Anyone have a recipe that they like for a chicken coating that is a little easier on the caloric/carb load? I can seem to get one or the other lowered, but not both.

I use hot and spicy pork rinds as a coating. I am not sure if you have an Aldis near you? That is where I buy the hot and spicy pork rinds that I use.
Not a pork rind fan, but interesting idea- I will have to think of some possible alternatives that are a little outside of the box.

I've had some REALLY good "paleo" fried chicken with a breading made from coconut flour and shredded parm. If you go light on the breading, I imagine it wouldn't be too bad.
I've used crushed almonds before, but you'll want to be careful with the portion sizes there.

I use 1/3 pork rinds, 1/3 ground nuts (or almond meal) and 1/3 parmesan. As for easier on the calorie load, even normal breaded stuff is pretty caloric. I just coat the top of the chicken and bake it, and don't bother to coat the bottom. Sadly, pretty much all the coatings are caloric when they are low carb. Probably coconut flour is the least so.
I follow a ketogenic diet post-op. I also have a diagnosis of binge eating disorder. Feel free to ask me about either!

I know. I will take the lower carb version, but dang- wi**** wouldn't add so much calories to it! The air fryer does a spectacular job of cooking crispy chicken, so now if I can just get the breading down!

I used their products for a bit during the weight loss phase. I am in maintainance so I don't mind using regular sauce now. The chicken is different because it kicks up the calorie count so high from the breading. Takes too big of a chunk out of my 1200 calorie target goal for a day!
