This does look tasty Frisco, I am guessing....ground turkey, probably with some seasoning, looks like maybe a little onion, cheddar, and a touch of either salsa or hot sauce over lettuce.
It does make it easier if you do have on plan foods at the ready. I spend time on Sunday's to make a couple of different things I can have ready for me during the week. I think I might try something like this one.
