Hi Everyone,
I had a good day on the diet yesterday, but today I'm having guests for dinner, so we'll see how I do.
Breakfast - salmon
Lunch - crack slaw
Dinner - meatballs and salad for me.
vitamins - on track
water - good
exercise - walking...
How about you? What cha eating?

This is my favorite meatball recipe. It came out of my favorite low carb cookbook "Lauries Low Carb Cook Book." which I use a lot.
I shape them into meatballs about 1 ounce each. Then I freeze them and I can pop them out as I need them.
Just this weekend, I tried some store-bought chicken meatballs by "al fresco". They were tomato basil chicken meatballs, and I really liked them. I think they'd be a good alternative when you don't have time to cook.
