Hi All,

Happy holiday weekend.  I'm planning a healthy Easter dinner with ham, mashed cauliflower, a green veggie, sweet potato casserole.  I'll have pumpkin pie and dinner rolls for the family. 

but today:

Breakfast - salmon

Lunch - pizza casserole

Lunch 2 / snack - ground beef and cabbage casserole

Dinner - Thai chicken thighs in peanut sauce.

vitamins - like clockwork

water - good

exercise - I need t walk more.

Next?

Easter can be a hard one for me, but I'm determined to just eat the ham and deviled eggs instead of the candy and dessert.  Thank goodness I LOVE hard boiled eggs, so I'll shove one in my mouth when I'm tempted to eat the "other" stuff.

B: soft boiled egg (my sister has chickens and the eggs are amazing!) with ½ cup home made yogurt

S: light string cheese

L: Buddig pastrami with one slice havarti cheese

S: home made beef jerky (I really like my dehydrator)

D: salmon with veggies

S: more yogurt

V: right on

L: so far, so good

E: none yet, but planning a long walk with hubby today

5' 5" tall. VSG on August 4, 2015/ Starting weight 239.9/ Surgery weight 210.9/ Current weight 137.4/ Goal weight 140/ No longer overweight, now a NORMAL weight. Now that I'm at goal, it's time to move on to maintenance!!!!!!!!

B: poached eggs on toast, 1 slice bacon

S: Rice cakes

L/S: Quest Protein chips, Premier protein bar

S: fresh veggie/fruit juice

D: yogurt harissa chicken

S: will have to see- depends on if I need to get more calories in

Surgeon: Chengelis  Surgery on 12/19/2011  A little less carb eating compared to my weight loss phase loose sleever here!

I've been craving pickles lately.. glad to find some sf options out there

 

B: protein shake

S: turkey bone broth

L: tuna with a sf pickle spear

S: hot tea with premier vanilla for creamer

D: hickory tuna packet      

S: the rest of the premier and/or sf bread and butter pickle slices

V/W: on track

E: washing the car and walking

Pizza casserole?  Thai chicken legs with peanut sauce?  I can't wait to get to eat like that!  Where can I find those recipes?

I've posted a lot of my favorite recipes on the recipe forum.  I posted the pizza casserole last week and I just posted the Thai chicken thighs in Peanut sauce there. 

I find I need to cook a lot post surgery.  Prepared foods have too many carbs and calories.  Plus having interesting choices helps me resist the pizza and lasagna and other temptations that I don't want to eat.
