Instant Pot: Caramel Macchiato yogurt

1 gal milk 

3 T caramel or 1 cup skinny flavoring

1 1/2  table spoons instant coffee

2 tablespoons plain yogurt

Sweetener

Directions:

Bring 1 gallon of milk up to temp 180 degrees.  Remove skim layer. Cool milk to 110 degrees. Add active culture yogurt.  Stir well. Cook for 10 hours then strain in nut bag for 5 hours.  Remove yogurt from nut bag and mix in 3 Tbsp caramel flavoring, 1 1/2 Tbsp instant coffee and whatever sweetener you use.  I use 45 Stevia packets or 30 of Splenda. (I know that sounds like a lot)  It makes a tad over 1/2 gallon of yogurt.  13 @ 5.3 ounce portions.

Just made yogurt last night!!!!  I make up individual flavors and will have to add this to my rotation.   Does the instant coffee dissolve well in the yogurt?

Yes.  I mix it with a whisk.

You need to be careful with using too many packets with sweeteners. (stevia or sucralose)

Some of them have added dextrose.  Dextrose=sugar. It may not be a lot per one package - but when you use a large number of that - i.e. 45.. that may add to overall sugar and calories count.

Yeah, they actually have just under 1g of carbs so they don't need to put that on the label legally.  I use liquid splenda which doesn't have the added stuff :)

I follow a ketogenic diet post-op. I also have a diagnosis of binge eating disorder. Feel free to ask me about either!

I normally use liquid stevia and didn't know how much to add.  It doesn't have any either.

This sounds really nice. I am just returning from a conference out of town, and need to make yogurt. I think I might try it on a smaller scale first - but that is my favorte flavor of latte so I am betting I will like it. Thank you for posting and I hope you love your Instant Pot!

Love the instant pot!  I use it mainly for yogurt. I like controlling the ingredients and just the fun of making it. Thanks for posting about it.

Just yogurt, eh?  Try a few meals- you will love it a hundred times more!!!  If you give me a couple of meal suggestions that you like I will match it to a simple recipe for you. Most times you can just pretty much dump the ingredients in and push a button. Worse case for me is I use it to brown meat first, then dump ingredients in and push a button!
