Spaghetti Squash (mac & cheese & lasagna)

Spaghetti Squash is pretty awesome.  It has not much flavor at all, but kind of gives you the feeling of eating pasta (kind of).  The benefit is it let's you have tasty saucy italiany (or any) thingys without much carbs.  

 

My sister made this last night -- she is trying to shed baby weight.  She and he husband said it was fantastic:

I have also made a fantastic spaghetti squash lasagna.  I basically use EggFace's ricotta bake recipe, but add in the squash to give it some more body.  I think I might make some of these next week.

 

Do you use spaghetti squash?  What are your favorite ways?

Thanks for posting this recipe.  I made my first spaghetti squash dish recently, and the possibilities are intriguing. I made a spaghetti squash carbonara.  I substituted plain Greek Yogurt for the cream/cream cheese, and it was ok, but not great.   I'm going to give your recipe a try.

I've been wanting to try the spaghetti squash. I love zucchini. Last night my daughter and I made stuffed zucchini's w/ground turkey, chopped onion, 1 garlic, 1 can marinara sauce and parmesan cheese! Delicious. I'm making lasagna tonight with zucchini sheets.  I'm excited about this!  

Spaghetti squash is super tasty - all winter squashes are :D

We eat spaghetti squash weekly.  I just made it as a lasagna in a pan substituting SS where they call for noodles.  My cousin who had never tried it loved it!

We make spaghetti with it and also like it with butter and garlic. We bake it pulp side up, throw a chunk of butter in it and rub with minced garlic.  Yummy!

I had a bumper crop of 15 squash from one plant in my garden this year so we are putting them to good use.

Another dish I love is acorn squash peeled and cut into chunks, apples peeled and cut into chunks.  Place in a pot with about 1/4 cup of water and boiled and mush as it boils.  Add butter and pumpkin spices.  Makes a great dish to add to your thanksgiving or christmas dinner.  Kids love it and don't realize they are eating squash :p
