Good afternoon everyone! It is beautiful in Chicago today. So wonderful to come back from vacation to 80 degree weather in and the pool at my gym open :) My meals are a bit out of order again because I spent a lot of time at the gym between my workout and taking my son to the pool.
B - egg whites, ham, 2 strawberries
S - chike (pre workout)
S - protein shake (post workout)
L - buffalo chicken & pea pods
S - greek yogurt & blueberries (either on a picnic this afternoon or later this evening)
D - chicken cordon blue casserole & bacon brussel sprouts
E - 2 mile run & yoga - maybe roller blading later
W - yes
V - going for them now!

Breakfast - salmon and zucchini in basil cream sauce - yum!
Lunch - roast leg of lamb and tzaziki sauce
Dinner - harvest chicken salad and green beans with pine nuts
vitamins - like clockwork

exercise - soon - off to the recumbent bike

The chicken cordon blue casserole I kind of just made up. I use chopped ham sauted w/ onions, chicken breast cut up into bite size pieces, some peas, and a progresso garlic recipe starter sauce and a few slices of light swiss cheese chopped up. I put it all together and bake for 30 mins. It is great!
I could use broccoli instead of peas for lower carb, but so many of my recipes use broccoli, so I wanted something different.
It was a lovely day here today! I had a great outside lunch with a friend and, in the shade, the breeze made for a super comfortable time. Then I got home and had a bowel movement that reminded me of the chest burster scene from Alien. Clearly I need to be taking miralax regularly.

Good evening! We had beautiful weather today. 88 degrees - mostly sunny but enough cloud passing over for some cooler, breezy moments. A lovely day to be out under the trees. Some of our best friends came into town, went to church with us, and we spent about 3 hours at my favorite Greek restaurant just catching up! It was just a great day. :-)
