Crustless Quiche - I'm in love!

Thanks for posting this one with real eggs.  I was trying to figure out what 3/4 cup would equal.

BAND REMOVED 9-4-12-fought insurance to get sleeve and won! Sleeved 1/22/13! Five years out and trying to get that last 15 pounds back off.

I'll do them without pastry too-just a little shredded cheddar!  Helps up the protein. I need to try the swiss though.....love swiss!

Your recipe sounds delicious.  Like posted above, Eggface's site has loads of recipes for mini quiches and meatloaves.

I love them!  My favorite combination so far is leftover chicken fajitas (the chicken, onions, peppers, and mushrooms) chopped up with pepper jack cheese.  SO delicious!
