Crustless Quiche - I'm in love!

Several people seem to enjoy these all the time.  I ended up throwing one together on Thursday and have been LOVING it all weekend.  

 

This is how I made it:

Ham / Broccoli / Swiss Crustless Quiche Muffins

Ingredients

  • 2 gloves garlic diced
  • 1 shallot diced
  • 1 package (8oz) diced ham 96% fat free
  • 3 slices reduced fat swiss chopped finely
  • 1/2 cup broccoli blanched
  • 1 tsp coconut oil
  • 3/4 cup skim milk
  • 3/4 cup egg beaters

 

0) Preheat oven to 350

1) blanch broccoli in boiling water for 3-4 minutes -- chop into small bite sized pieces

2) saute garlic & shallots in coconut oil.  Add ham and saute for a few more minutes.  You could skip sauteing the ham as it is already cooked, but this gives it a little char on the edges which is yummy!

3) Mix egg beaters w/ milk & spices (I used garlic salt, pepper and some dry mustard).

4) Assemble -- you could do this all as one quiche.  I made them in muffin tins for easy portioning.  I lined the muffin pan w/ tinfoil cup cake liners.  Spray liners w/ Pam.  Put some broccoli on the bottom, then ham, then swiss.  Pour some of egg mixture over the top and top w/ swiss.  

5) Bake for about 30 minutes.

Makes 6 muffins.  Nutrition per muffin:

118 calories, 6g carbs, 4 g fat, 16 g protein.

 

These reheat very well in the toaster oven.  I haven't tried yet in the microwave.

I've always wanted to try crustless quiche since I love quiche!!!  When you say muffin is this a regular muffin size or mini muffin?

Regular size.  118 calories and it is a good size.  I have it w/ some veggies and am nice and full :)

I live on crustless Quiche!

 

I have one almost every morning for breakfast. 

I make a pan of 12.

 

10 eggs

2 cups shredded cheese

1/2 package of diced ham

onions

red peppers

Bake at 350 for 30 mins.  YUMMMMMMM!

You can put anything in with eggs!!

 

I also live on a mean muffin tin meatloaf!

Could you share the recipe for your meatloaf?  I haven't been too successful with these so far.

Yummy Turkey Meatloaf:

Ingredients

  • 1 tablespoon butter
  • 2 cups chopped onion
  • 1 (8-ounce) package presliced mushrooms
  • 3 garlic cloves, chopped
  • 3/4 cup panko (Japanese breadcrumbs)
  • 1/4 cup fat-free, less-sodium chicken broth
  • 3 tablespoons chopped fresh flat-leaf parsley
  • 1 tablespoon low-sodium soy sauce
  • 1 tablespoon Sriracha (hot chile sauce, such as Huy Fong)
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon freshly ground black pepper
  • 1 1/2 pounds ground turkey breast
  • 1 large egg, lightly beaten
  • Cooking spray
  • 1/2 cup ketchup
  • 1 tablespoon brown sugar
  • 1/8 teaspoon dry mustard
  • 1/8 teaspoon ground nutmeg

Preparation

1. Preheat oven to 350°.

2. Melt butter in a large nonstick skillet over medium heat. Add onion, mushrooms, and garlic to pan; cook 8 minutes, stirring occasionally. Remove from heat; cool 5 minutes.

3. Combine mushroom mixture, panko, and next 8 ingredients (through egg) in a large bowl; stir well to combine. Shape turkey mixture into a 9 x 5–inch rectangle on a broiler pan coated with cooking spray, or place in muffin tins that have been sprayed with cooking spray.

4. Combine ketchup, brown sugar, mustard, and nutmeg in a small bowl, stirring with a whisk. Spread ketchup mixture evenly over top of meat loaf; bake at 350° for 40 minutes (30 minutes for muffin loaves) or until a thermometer registers 160°. Let stand for 10 minutes before serving.
