Vitamins:  Left at home =(

Oh - I made thai chicken curry last night.  It was delish :) thanks for the recipe.  I have 3 more servings waiting for me in the freezer when I get home.

 

Today: (better than yesterday)

B - chike & calcium

S - greek yogurt w/ strawberries

L - chicken meatballs w/ carrots (multi vitamin)

S - string cheese & clementine

S - string cheese (will have this if my first snack is several hours before my workout)

D - spaghetti squash lasagna muffins

S - cottage cheese w/ blackberries & calcium -- let's see how Casein affects me!

I might throw in a 100 calorie pack of almonds at some point depending on how I feel.  

 

E - planning for spinning & yoga, might end up in the pool

W - on track

V - scheduled.

Glad you liked it.  It's SOOO amazingly easy!! And you can switch up the meat and the veggies =)  I always have coconut milk and curry powder on hand!

Yes - you know what I do with the coconut milk b/c I can never use a whole can.  I freeze it in blocks of 1/4 cup.  Then I just pull out what I need.  It worked great!

Happy Monday!

B: Hazelnut iced coffee, couple bites of an apple that turned out to be too bruised for my taste

S: GoGurt (hehe, Ms. Shell. My kids are 4, 5 and 10. My GoGurt is the real kind with Spongebob on it!)

L: Leftover homemade chicken curry over 1 tbsp couscous

S: Probably some more coffee!

D: I'm going to try to make some homemade peanut Thai chicken with steamed broccoli and a garden salad

S: Eh. Maybe leftovers or a GY

Liquids: Chug-a-luggin

Vits: Half done

Exercise: Walking home from work and to pick up my daughter after school on this beautiful sunny Maine day (Not by choice really, my minivan's in the shop. But it's a fantastic day and work/school/home are all within a mile or so of each other).

When I made it by accident on Friday.  I was on the go so I tossed my yogurt into my left over almond milk and drank.  I was like WAIT this is like gogurt.  Today I decided to just add a little protein since I'm working out =)

Peanut Thai Chicken tell me more =)

It's a new recipe I'm trying out tonight that involves chicken breast, chunky peanut butter, soy sauce, ginger, honey, curry, garlic, and cream of chicken soup. I'll report and get some stats on it if it turns out well :)
