Good Friday morning!  Thank God it's Friday!!  Ready for the weekend??!!  Why yes I am!!  I have a list of Things To Do to keep me occupied.  I'm rather enjoying my crustless spinach quiche so I'll be getting the supplies for that again this week!!  Let's go!!

B:  Spinach Quiche

L:  Tuna; Salad
S:  CarbMaster Banana Cream Pie
D:  Some type of seafood

Exercise:  Strength Training Class

Do you have a recipe for the no tortilla burrito bake?  It sounds yummy.  I make an enchilada casserole with low-carb tortillas.  I bet its similar.

Here you go I just snagged it for you =)

Shelly's Black Bean Burrito Bake (Tortilla-less)

1 Yellow Onion, chopped
2 Green Onions, diced (divided use)
1 teaspoon Ground Cumin
1 teaspoon Oregano
1 (15 oz.) can Black Beans, rinsed and drained
1 (12.5 oz.) can White Meat Chunk Chicken, drained
1/2 cup Salsa (I used a Medium Roasted Tomato, any heat you prefer)
1/4 cup Shredded Mexican Blend Cheese (Colby Jack)
Greek Yogurt for serving

Saute yellow onion and most of the green onion till golden, save a Tablespoon or so of diced green onion back. Add cumin and oregano and saute 1 minute. Break up chunk chicken with a fork a bit. Add all ingredients. Stir and heat till warmed through. Spoon equally into 4 shallow oval gratin dishes. Sprinkle each with a Tablespoon of shredded cheese and remaining chopped green onion. Broil a few minutes till cheese is bubbly and golden. Top with a dollop of Greek yogurt.

Woke up extra early today and I'm feeling so so sleepy right now.  UGH, oh well, TGIF! 

B: easy omelet egg white, broccoli and cheddar

L: sushi!  avocado and shrimp roll.  I mostly knock the stuff out of the seaweed and eat it like that.

D: It's Lent and I'm going to a card party at a Catholic school tonight.  They're probably having pizza.  I will try to get something else before hand.

Happy Friday, Everyone!  I'm so glad to have a down day.  Its been a crazy 2 weeks.

Breakfast - harvest chicken salad with walnuts and cranberries - yum

Lunch - crack slaw - also yum.

Dinner - parmesan crusted chicken and roasted zucchini and red peppers

vitamins - done

water - good

exercise - recumbent bike - can't wait to get to it.  (Could this really be ME? hehehe)

Getting over this annoying "bug" that had me home in bed for 6 days, and I still sound like Barry White.  Although, the loss of appetite got me below that 200lb mark!  No complaints there!!!

B - coffee, breakfast sausage
Sn - string cheese
L - chicken salad
Sn - jerky or almonds
D - hubby is making crock-pot pot roast - YUM!

Fluids - doing ok
Vits/Meds - check
Ex - still don't have the energy.  hopefully back to it Monday!
