I cooked all day yesterday and here's the plan for today!!

B:  Crustless Spinach Quiche
S:  Coffee; Almond Milk
L:  Thai Coconut Curry Chicken; Salad
S:  Roadside Lemonade (protein) mixed with Special K Fiber Pink Lemonade
D:  Taco Meat mixed with Mexican Cauliflower "rice"

Water:  5/12
Vitamins:  Check
Exercise:  BodyPump via 24hr Fitness

Oooo, I like the sound of the Taco meat and Mexican Cauliflower, I will need to try that one.

B: coffee and soy lite

L: salad with bay shrimp and egg lite dressing

D: mushroom stuffed pork chop with wine sauce over cauliflower mashed potatoes.

I have soup defrosted if I need a snack.  I might also just reach for last nights Chinese chicken salad (Frisco's blog).

I much prefer mashed cauliflower, but this mexican cauliflower recipe I will tweak =)

I'm having issues with eating three "meals" a day.  I just don't want to.  It feels too heavy.  Like too much food.  So I've been doing a FroYo protein popsicle for a late dinner and that seems to be working well for me.  

B: 2 ounces chickpeas, 1 ounce pureed tzatziki

S: protein shake w/ 2T Benefiber and 1 dose Miralax

L: 2-3 ounces turkey pot pie, pureed (I'll be making this with the last of the leftover Thanksgiving turkey.  Yum.)

D: FroYo Protein Popcicle

Vits: 1 of 4

Water: Working on it, as always

Exercise: 60 minutes on the treadmill at 2mph with .5% incline!  I was worried I wouldn't be able to do the 60 minutes when I started upping the incline, but it was no problem :D

B - Hot chocolate protein drink with 2 tsp instant coffee

L- Tuna with light mayo and 1/2 cup steamed broccoli

S- Greek Yogurt

Afternoon coffee with non dairy coconut creamer

D- X-tra lean beef taco meat wrapped in a low carb tortilla with steamed veggies

Water and vits-on track

Excercise-30 min eliptical

oh - could you share the thai coconut curry chicken recipe?

I could but then I'd have to kill you!!

I take a pound of chicken cut it up in pieces and toss in 1 1/2 tbsp of curry powder and 1 tsp red chili powder (you'll have to find what works for you and your spice level likes) - let that sit overnight

1 tsp oil
1 onion
1lb chicken
1 can bamboo shoots
1 cup light coconut milk (or regular depending on your diet)
2 tsp fish sauce

Saute onion till soft, toss in chicken and cook till done, toss in bamboo shoots (I like mine a little crunchy so you can decide how long to cook it).  Pour in can of coconut milk and fish sauce and simmer low heat about 5 minutes.  I sometimes will add about a 1/2 tbsp of corn starch to thicken.  Serves 4-6-8 depending.
