Cream Cheese Pumpkin Muffins
4oz package of cream cheese, softened
2 Tbsp Zsweet (or splenda)

2 eggs
1/2 tsp vanilla extract
1/4 cup pumpkin puree
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1 tsp baking powder
1/4 cup + 2 Tbsp Vanilla Whey Protein powder (basically 1 1/2 scoops)
1/4 cup + 2 Tbsp Almond flour

Preheat oven to 350 degrees F
In large mixing bowl, cream together cream cheese and sweetener till smooth. Add eggs one at a time, then add vanilla extract. Add pumpkin puree and mix until smooth. May need to scrape bowl as needed. With mixer running add why protein powder, almond flour, baking powder, cinnamon and nutmeg. Mix until combined. Line 12 muffin cups with liners. Evenly spoon batter among them (the muffins I have are small so depending on your size muffin time you may get 6 large or like me 12 mini). Bake at 350F for 20-25 minutes
Each of 12 Muffins: Calories 85, Fat 6g, Carb 2g, Fiber 1g, Protein 6g, Net Carbs 2g

I use Zsweet but your sweetener of choice can be used I would just taste the batter to test the sweetness level.  I get Almond Meal from Trader Joes.

Hey Ms. Shell!!!
Fo Sho is all I'm gonna say on that one, LOL!!!
It was John's birthday yesterday. We went to disneyland last night & had fun like little kids! We even danced with the teenagers at the Mad Tea party in CA Adventure. We took a pic with Santa Claus. I got him on the Hollywood Tower of Terror which he didn't want to go on, lol!!!
I have no idea what I'm eating for breakfast yet.
Hope you are doing well!!

Hi Carol...
It so easy and quick..
I salt and pepper some tilapia filets ( I usually add 2 extra to have for leftovers for a couple days)
I line a cookie sheet (w/ small lip) w/no stick foil
Broil for 8-10 minutes...
While that's broiling...
Put about 3-5 tbs olive oil. In sauté pan( heat a little)and add minced garlic, oregano, and A couple sprinkles bread crumbs
I then take fish out of the oven, spread the oregano mixture onto the filet
And put back under broiler for about 1-2minutes..
