directions: I put the tortilla in a non stick skillet to toast one side. Turned the tortilla over and added the sauce, put on toppings. Cooked until the tortilla was toasted on the other side and the cheese was melted.

The important thing was to toast the tortilla.  I toasted the toppings side first in a skillet and then added my toppings to that side and cooked with the lid on until the other side was toasted and the cheese was melted.  I got the nutritional information by creating a recipe in MFP.  You could do the same thing with other toppings.  Next time I might make the whole thing with only meat and cheese toppings to make it more protein dense.

I found Shelly's ricotta bake to be a helpful tool to get me through pureed/softs and also help with my cravings.

I think i trigger on the sauce. Now i can cook up a meatball, put sayce and mozzarella on it, and be happy as a pig in mud.

Honestly there are healthier things to eat, but I have been craving pizza like a crazy person for the last couple of weeks.  I figured that I needed to come up with a healthier option to curb that craving.  I wouldn't eat this every single day, but it is nice to have a healthy alternative to pizza hut.

I go for a no-crust pizza bowl. Turkey pepperoni, a spoonful of pizza sauce, and an ounce of mozzarella, heat in microwave, and eat with a spoon.
