Like tofu?? Try these recipes!
So in my I miss you thread, someone asked about this "low carb Mac&Cheese" recipe I had. So I found it and also found this other one =) Nowadays I'd probably steam some cauliflower and add to give more "texture"!!
Tuna Tofu Casserole
14oz Extra Firm Tofu
2 (6oz) cans tuna
Cream of Mushroom Soup
1 cup milk
1/2 cup egg beaters (or 2 eggs)
2 cups frozen peas
8oz cheddar cheese (2 cups shredded)
Salt & Pepper to taste
Drain tofu with use a fork to break it up, drain and add tuna, add remaining ingredients (reserving 1/4 cup cheese for the top). Spread in pam sprayed 8x8 baking dish. Top with remaining 1/4 cup cheese. Bake 350 oven for 30-40 minutes or until it is bubbly and lightly browned on the top.
It actually tastes like Tuna Noodle Casserole (without the noodles of course)!!
Mock Mac&Cheese

Drain tofu completely, use a fork to kinda crumble it, add remaining ingredients (reserving 1/4 cup cheese for the top). Spread in pam sprayed 8x8 baking dish. Top with remaining 1/4 cup cheese. Baked 350 oven for 30-40 minutes or until it is bubbly and lightly browned on the top.

Hey doll...I first tried this recipe in 2008 (yup 5 long years ago). And this is the quote that started off my thread..does this answer your question?? I would NEVER post I recipe on OH that not only did I make but LOVED..
