Im obsessed with soup!
I dont know why it took me so long to get on this bandwagon...but even in the 100 degree desert, Im hooked on chicken soup. I had Pho for the first time a couple weeks (yumm with noodles too!) and loved it. So now ive been making my own noodle-less version at home and it's all I want to eat.
I use fat free, low sodium organic chicken broth, shredded chicken, shredded carrots, bean sprouts, green onion, cliantro, and lemon/lime juice.
Its way more filling that just eating a couple oz of chicken - that's for sure!
Ill probably be experimenting with other soups now too since Im off work and have lots of time.

Welcome to the world of pho!
I make it at home too and without the noodles but add loads of veggies and chicken to make up for it.
Soups are the way to go. Up here in Vancouver, there's a local company that makes amazing soups for $5-6 and it lasts me days. I usually add my own twist to the soups but I loovvveee soups!
